The heart of the menu is the communal rice, designed to emphasise the centrality of diners by involving them in the dish’s creation. The rice is prepared with red fir butter and served at the center of the table to enhance the communal aspect. Each guest will have their own set of aromatic essences and extracts to compose their dish.
